The Johnson Family Christmas Cooky [sic]



Wasps' Nests

Butter and flour cooky [sic] sheets. Set the oven at 300 degrees.

Shred lengthwise:
. 5 pound blanched almonds
Cook together until the syrup spins a thread (240 degrees):
.5 cup sugar
.25 cup water
Stir in the almonds.
Grate or chop fine:
1 package semi-sweet chocolate
Beat until very stiff:
3 egg whites
Add by spoonfuls, beating constantly:
2 cups confectioners' sugar

Add the chocolate and the almond mixture. Put half-teasponfuls of the dough on the cooky [sic] sheets. Bake until dry (about 25 minutes). Let stand 10 minutes and remove from the pan. Makes 100.

You could follow the recipe as written in the Fannie Farmer Cookbook (circa 1960), or you could do it the way today's Johnson's really bake. We buy already shredded almonds and skip the sugaring step. Then we skip the chocolate grating and use chocolate chips. Someday I'm going to actually follow the recipe. In the meantime we bake the simplified version every year.
